Hopefully you've read the other two informational portions of the web site, About Coffee and History.  If not, it would be worth a quick diversion to those pages for more detailed information.  Regardless, there are many reasons why Scraps coffee is better than supermarket brands.  First, commercial coffees are usually a mix of Brazils and Robustas, with constituent beans coming from all over the world, wherever they can be purchased cheapest.  The first (and only) commercially available single-origin coffee was Columbian Coffee (remember Juan Valdez?).  Even then, the coffee beans used to make those grinds are not the highest quality beans.  Another important factor is when the beans were ground.  Obviously, when beans are ground they immediately begin to degrade, as discussed in "About Coffee".  The problem with supermarket coffee, even if good beans were used, is that the coffee must be ground, and then allowed to sit (freshly ground coffee emits gases, which, if packaged right away in a can or bag, would build up pressure and eventually blow up the container).  By the time the coffee is packaged and sent to the warehouse it is already stale.  Some commercial coffees come with a one way valve, which would help solve this problem, but the other problems remain.  Finally, supermarket coffees are usually made from beans that have been processed carelessly, which hampers quality significantly.  Unlike supermarket coffees, beans used and sold at Scraps are roasted after they are ordered, assuring the freshness of the product.  We monitor our beans carefully to make sure that beans do not stay on the shelf too long.   The end result is the freshest cup of coffee possible!
